Gazing over the ancient walls of Berkeley Castle in Gloucestershire, England, I was suddenly roused from my reverie by the sound of a hundred dogs barking. Red jackets and horses blazed by- a hunt! It was utterly exhilarating, and inspired me to create this bracing smokey blend using three Estate Keemun black teas grown between the Yellow Mountains and Yangtze River in China’s esteemed high-grown mountain Keemuns, each brimming with rich resonant flavors and savory smoky notes. To create my comforting vanilla chai blend, I combine rich vanilla pods, decaffeinated black Indian tea and aromatic spices like cinnamon, cardamom, cloves and ginger sure to bring warm smiles on a frosty evening by the fire. This Scottish Breakfast tea is brawny and bright, with lively, malty flavors, mellow honey undertones, and hints of clove and citrus. Because I love bright, lively summer's fruit flavors, I chose to infuse a decaffeinated Ceylon tea with apricot and passionfruit and sprinkled in the goodness of a citrus-infused green tea. The combination is a winner, indeed! Naturally low in caffeine, Ascot is lovely sipped from a dainty cup, or served over ice with a splash of Pimm’s or better yet Limoncello!
